Not a question but a revelation. I kept on having this issue on my dev environment where logs would not get recorded, and I never looked into that until yesterday, and I realized the issue has to do with the MySQL setting explicit_defaults_for_timestamp was enabled. This is rarely an issue since is disabled by default but for some reason, it was enabled on my dev server. I figured I'd share here in case anyone runs into the same issue.
